Stinging Nettle Soup

Stinging Nettle

Stinging Nettle

Tasty and healthy and cooked in the microwave oven
makes approx 1 pint

1 cup young nettle heads rinsed
1 medium potato
1 medium onion
3/4 pint chicken or veg stock
few sprigs of fresh parsley
1 stick celery
good knob of butter.

Method

Cut up onion, potato and celery into small pieces. Combine with1/2 pint of stock.
Cook in the microwave on full power for approx 3 minutes
then add the nettles and parsley.
Cook another 3 minutes on full power

Add the butter, the remaining stock, and salt and pepper to taste.

Mmmm, it's tasty .....
